Homemade Horchata- Dairy Free
Horchata is a Mexican rice drink. With flavors of cinnamon and vanilla it makes a perfect cozy fall drink. If you have ever ordered this drink from a Mexican restaurant you probably found it to be overly sweet. It most likely will contain dairy as well. You will find this recipe to be slightly sweet and so refreshing, its also dairy free. Its incredibly easy to make. This recipe s from the book "Thug Kitchen" which is a vegan cookbook ( be sure to check it out ) I am sharing it because it is one of my favs and I don't want you to miss out on some yummy eats!!
Ingredients
1 cup uncooked long grain or basmati rice
2/3 cup raw almonds
3 inch cinnamon stick
4 cups filtered water
2 tablespoons agave (or to tatse)
Ground cinnamon for garnish
Ice
Directions
Rinse rice well under cool water. thrown into a large container with lid and add the almonds, cinnamon stick and water. Let this soak overnight on counter (best) or in fridge.
When the soaking is done, dump the entire container into the blender, cinnamon stick too! Blend until nice and smooth. Then take a fine mesh strainer or cheesecloth the filter out all the grit. Add another 1/2 cup filtered water, then add agave to preferred sweetness. Store in fridge. Serve with ice and some cinnamon sprinkled on top!! Enjoy!
